Brown Butter Peach Cupcakes
Ingredients:
- 1/2 cup 1 stick unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 2 ripe peaches, peeled and diced
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 cup chopped pecans optional
- Whipped cream or frosting for topping optional
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with cupcake liners
In a small saucepan, melt the butter over medium heat
Continue cooking, swirling the pan occasionally, until the butter turns a deep golden brown color and has a nutty aroma
Remove from heat and let it cool slightly
In a large mixing bowl, combine the granulated sugar and browned butter
Mix until well combined
Add the eggs one at a time, mixing well after each addition
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, beginning and ending with the dry ingredients
Mix until just combined
Stir in the vanilla extract, diced peaches, brown sugar, cinnamon, nutmeg, and ginger
Fold in the chopped pecans if using
Divide the cupcake batter evenly among the prepared muffin cups, filling each about 2/3 full
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
Remove the cupcakes from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely
Once cooled, you can top the cupcakes with whipped cream or your favorite frosting if desired
