Instant Pot Low-Carb Chicken Tortilla Soup
This Instant Pot Low-Carb Chicken Tortilla Soup is a tasty and filling meal that is great for people on the keto diet. It will become a family favorite because it has tender chicken, vegetables, and tasty spices.
Ingredients:
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup diced onion
- 1 cup diced bell peppers
- 2 cloves garlic, minced
- 1 can diced tomatoes, undrained
- 4 cups chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1 avocado, diced optional
- Lime wedges for serving optional
Instructions:
Place diced chicken, onion, bell peppers, garlic, diced tomatoes, chicken broth, chili powder, cumin, paprika, oregano, salt, and pepper into the Instant Pot
Close and lock the lid, set the pressure release to Sealing, and select the Soup function
Cook on high pressure for 10 minutes
Once the cooking is complete, allow the pressure to release naturally for 10 minutes, then quick-release any remaining pressure
Open the lid and stir the soup
Serve hot, topped with shredded cheddar cheese, chopped cilantro, diced avocado, and lime wedges, if desired
