Egg Lemon Orzo Soup



A tasty and comforting soup made with orzo, shredded chicken, and a sour egg-lemon broth. Great for a quick and healthy meal!

Ingredients:

  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 3 eggs
  • 1/2 cup fresh lemon juice
  • 1 cup cooked shredded chicken
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh dill

Instructions:

Put chicken broth and orzo pasta in the pressure cooker

Put the lid on top of the cooker and set it to high pressure for 4 minutes

Mix the eggs and lemon juice in a bowl while the orzo is cooking

When the orzo is done, quickly open the lid and let the water out

Pour the egg-lemon mix into the hot soup slowly while stirring all the time

Add the chicken shreds and season with salt and pepper to taste

Allow the soup to sit for a few minutes so that the flavors can mix

Add the chopped fresh dill right before you serve

Enjoy the warm Egg Lemon Orzo Soup while it's still hot!
