Vegan Spaghetti



A flavorful and nutritious vegan version of classic spaghetti, packed with cherry tomatoes, mushrooms, and spinach, seasoned with aromatic herbs and spices.

Ingredients:

  • 200g spaghetti
  • 1 cup cherry tomatoes, halved
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup sliced mushrooms
  • 1/2 cup chopped spinach
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

Follow the directions on the package to cook the spaghetti until it is al dente

Remove the water and set it aside

Warm up the olive oil in a big pan over medium-low heat

Add the minced garlic and diced onion

Saut for about 3 to 4 minutes, until the garlic smells good and the onions are clear

Put mushrooms, cherry tomatoes, and dried oregano in the pan

After 5 to 6 minutes, the tomatoes will start to get soft

Put chopped spinach and cooked spaghetti into the pan

Add everything to the bowl and mix it well

Add red pepper flakes, salt, and pepper to taste

Add more spinach and cook for two to three minutes more, until the spaghetti is hot all the way through

Take it off the heat and serve it hot with fresh basil leaves on top
