Toasted Coconut, Cherry, Oatmeal and White Chocolate Cookies Tutti Dolci
Ingredients:
- 1 cup shredded coconut, toasted
- 1/2 cup dried cherries, chopped
- 1 cup old-fashioned oats
- 1/2 cup white chocolate chips
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
Instructions:
Preheat the oven to 350F 175C and line baking sheets with parchment paper
In a bowl, combine the toasted shredded coconut, chopped dried cherries, oats, and white chocolate chips
Set aside
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt
In a large mixing bowl, cream the softened butter, granulated sugar, and light brown sugar until light and fluffy
Beat in the egg and vanilla extract until well combined
Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined
Fold in the coconut, cherry, oat, and white chocolate chip mixture until evenly distributed in the cookie dough
Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart
Bake in the preheated oven for 10-12 minutes, or until the cookies are golden around the edges
Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely
